What's For Dinner

Thai Shrimp Bisque




1 lb uncooked shell-on jumbo shrimp
1/4 c sliced green onions
1 tsp ground ginger
1 tsp vegetable oil
2 pressed garlic cloves
2 tbsp cornstarch
1 tbsp sugar
3 tbsp fish sauce
1 tbsp red curry paste
2 cups chicken broth
14oz can lite coconut milk

*peel, devein shrimp, and remove tails, set aside
*heat oil med heat, add onions, ginger, garlic- cook and stir 2 min
*stir in conrstarch, sugar, fish sauce, and curry paste
*gradually add broth and coconut milk; bring to boil
*add shrimp.  reduce heat; simmer, uncovered 3-4 mints or just until shrimp turns pink and is cooked through
*ladle soup over bowls of rice
*shower after cooking if you plan to go out: the fish sauce is a little stinky.  :)
